Teriyaki Pineapple Chicken

Ingredients
For the Chicken
- 1½ lb (680 g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 tablespoons olive oil
- Salt and black pepper, to taste
Vegetables
- 2 cups fresh pineapple chunks
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 small onion, sliced
- 2 cloves garlic, minced
Teriyaki Sauce
- ½ cup low-sodium soy sauce
- ¼ cup honey
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
- 2 tablespoons water
Garnish
- Sesame seeds
- Sliced green onions
Instructions
- In a small bowl, whisk together the soy sauce, honey, brown sugar, rice vinegar, ginger, sesame oil, cornstarch, and water. Set aside.
- Heat the olive oil in a large skillet over medium-high heat.
- Season the chicken lightly with salt and pepper, then cook for 6–8 minutes, stirring occasionally, until browned and nearly cooked through.
- Add the onion, bell peppers, and garlic. Cook for 3–4 minutes until the vegetables are crisp-tender.
- Stir in the pineapple chunks and cook for 2 minutes.
- Pour the teriyaki sauce into the skillet and stir well to coat everything evenly.
- Simmer for 2–3 minutes, until the sauce thickens and the chicken reaches an internal temperature of 165°F (74°C).
- Remove from the heat and garnish with sesame seeds and sliced green onions.
