Ultimate Crispy Roast Potatoes
These Ultimate Crispy Roast Potatoes are beautifully golden and crunchy on the outside with fluffy, buttery centers. They’re an easy side dish that pairs perfectly with roasted meats, grilled chicken, or holiday dinners.
Ingredients
- 2½ lbs (1.1 kg) Yukon Gold or Russet potatoes
- 3 tbsp olive oil (or duck fat for extra-crispy potatoes)
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chopped fresh rosemary (or ½ tsp dried)
- 1 tsp chopped fresh thyme (or ½ tsp dried)
- 4 garlic cloves, lightly crushed
- 2 tbsp chopped fresh parsley, for garnish
- Flaky sea salt, for serving (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Peel the potatoes (optional) and cut them into evenly sized 2-inch chunks.
- Bring a large pot of salted water to a boil. Add the potatoes and parboil for 8–10 minutes, until the edges are just tender.
- Drain the potatoes well and let them steam dry for 2–3 minutes.
- Return the potatoes to the pot and gently shake them to rough up the edges. This helps create an extra-crispy crust.
- Toss the potatoes with the olive oil, salt, pepper, garlic powder, onion powder, rosemary, and thyme.
- Spread the potatoes in a single layer on a large baking sheet or roasting pan. Add the crushed garlic cloves around the potatoes.
- Roast for 45–55 minutes, turning the potatoes halfway through cooking, until they are deep golden brown and crisp.
- Sprinkle with fresh parsley and a pinch of flaky sea salt before serving.
Tips
- Yukon Gold potatoes have a creamy texture, while Russet potatoes become especially crispy.
- Avoid overcrowding the pan so the potatoes roast instead of steam.
- For even crispier potatoes, preheat the baking tray in the oven before adding the potatoes.
