Ingredients
For the Steak Bites
- 1½ lbs (680 g) sirloin steak, cut into 1-inch cubes
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- 1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 tablespoon chopped fresh parsley
For the Creamy Parmesan Potato Clouds
- 2 lbs (900 g) Yukon Gold potatoes, peeled and cubed
- 4 tablespoons unsalted butter
- ½ cup warm milk
- ½ cup grated Parmesan cheese
- ¼ cup sour cream
- Salt and black pepper, to taste
Instructions
1. Make the Mashed Potatoes
- Place the potatoes in a large pot and cover with cold, salted water.
- Bring to a boil and cook for 15–20 minutes, until fork-tender.
- Drain well and return the potatoes to the hot pot for 1 minute to remove excess moisture.
- Mash with the butter, warm milk, Parmesan, sour cream, salt, and pepper until smooth and fluffy. Cover to keep warm.
2. Cook the Steak Bites
- Pat the steak cubes dry with paper towels and season with the salt and pepper.
- Heat the olive oil in a large cast-iron skillet over medium-high heat until very hot.
- Add the steak in a single layer, working in batches if necessary to avoid overcrowding.
- Sear for 2–3 minutes without stirring, then turn and cook another 1–2 minutes for medium-rare, or longer to your preferred doneness.
- Reduce the heat to medium. Add the butter, garlic, Worcestershire sauce, thyme, and rosemary.
- Stir continuously for 1–2 minutes, spooning the garlic butter over the steak until fragrant.
- Remove from the heat and sprinkle with the chopped parsley.
3. Serve
Spoon a generous portion of the creamy Parmesan potato clouds onto each plate. Top with the garlic butter steak bites and drizzle any remaining garlic butter from the skillet over everything.
