Ingredients
- 2 ribeye, New York strip, or sirloin steaks (1-inch thick)
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons unsalted butter
- 3 cloves garlic, smashed
- 2 sprigs fresh rosemary or thyme
Instructions
- Remove the steaks from the refrigerator 30 minutes before cooking. Pat them dry with paper towels.
- Season both sides generously with the salt and black pepper.
- Heat a heavy skillet or cast-iron pan over high heat until very hot. Add the olive oil.
- Place the steaks in the pan and cook without moving them for 3–4 minutes, until a deep golden-brown crust forms.
- Flip the steaks and cook for another 3–4 minutes for medium-rare, adjusting the time for your preferred doneness.
- Add the butter, garlic, and rosemary or thyme to the pan.
- Tilt the pan slightly and spoon the melted butter over the steaks for 1–2 minutes.
- Remove the steaks from the pan and let them rest for 5–10 minutes before slicing.
