Chill Time: 30 minutes (optional)
Bake Time: 12–15 minutes
Servings: About 40 cheese straws
Ingredients
- 2 cups (250 g) all-purpose flour
- 2 cups (225 g) sharp cheddar cheese, freshly grated
- ½ cup (115 g) unsalted butter, softened
- 1 teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon cayenne pepper (optional)
- 2–3 tablespoons cold water, as needed
Instructions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large bowl, mix the flour, salt, garlic powder, onion powder, and cayenne.
- Add the butter and work it into the flour until the mixture resembles coarse crumbs.
- Stir in the grated cheddar cheese.
- Add the cold water, 1 tablespoon at a time, until the dough comes together.
- Transfer the dough to a piping bag fitted with a large star tip, or roll it out to ¼-inch (6 mm) thickness and cut into strips.
- Arrange the cheese straws about 1 inch apart on the prepared baking sheets.
- Bake for 12–15 minutes, or until lightly golden around the edges.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Optional Flavor Variations
- Add 1 teaspoon smoked paprika for a smoky flavor.
- Mix in 2 tablespoons grated Parmesan for extra cheesiness.
- Sprinkle with everything bagel seasoning before baking.
- Add a pinch of black pepper or a little extra cayenne for more heat.
Storage
- Room Temperature: Store in an airtight container for up to 1 week.
- Freezer: Freeze the baked cheese straws or unbaked dough for up to 3 months.
Tip: Freshly grated sharp cheddar melts better than pre-shredded cheese and gives the cheese straws their classic rich flavor and crisp texture.
