- 4 cups (950 ml) chicken broth
- 1 cup (240 ml) whole milk
- ½ cup (120 ml) heavy cream
- 2 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- ½ teaspoon salt
- ½ teaspoon black pepper

Instructions
- Heat the butter and olive oil in a large pot over medium heat.
- Add the onion, carrots, and celery. Cook for 5–6 minutes, stirring occasionally, until softened.
- Stir in the garlic and cook for 30 seconds, until fragrant.
- Sprinkle the flour over the vegetables and cook for 1 minute, stirring constantly.
- Gradually whisk in the chicken broth until smooth.
- Add the potatoes, thyme, parsley, salt, and pepper. Bring to a gentle boil.
- Reduce the heat and simmer for 15 minutes, or until the potatoes are almost tender.
- Stir in the broccoli, peas, and shredded chicken. Simmer for another 5–7 minutes.
- Add the milk and heavy cream, stirring gently. Heat until warmed through, but do not boil.
- Taste and adjust the seasoning if needed.
- Serve hot, garnished with fresh parsley and Parmesan cheese if desired.

- For a thicker soup, mash a few cooked potatoes directly into the broth.
