These Soft, Juicy Blueberry-Filled Oat Bars are tender, naturally sweet, and bursting with juicy blueberries. Made with wholesome oats and a buttery crumble topping, they’re perfect for breakfast, snacks, or a healthier dessert.
Ingredients
Oat Base & Crumble
- 2 cups (180 g) old-fashioned rolled oats
- 1 cup (125 g) whole wheat or all-purpose flour
- ½ cup (100 g) light brown sugar or coconut sugar
- 1 tsp baking powder
- ½ tsp ground cinnamon
- ¼ tsp salt
- ½ cup (115 g) unsalted butter, melted (or coconut oil)
- 1 tsp vanilla extract
Blueberry Filling
- 2 cups (300 g) fresh or frozen blueberries
- 2 tbsp maple syrup or honey
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tsp lemon zest (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line an 8-inch (20 cm) square baking pan with parchment paper.
- In a large bowl, combine the oats, flour, brown sugar, baking powder, cinnamon, and salt.
- Stir in the melted butter and vanilla until the mixture resembles coarse crumbs.
- Press two-thirds of the oat mixture firmly into the bottom of the prepared pan.
- In another bowl, toss the blueberries with the maple syrup, cornstarch, lemon juice, and lemon zest.
- Spread the blueberry mixture evenly over the crust.
- Sprinkle the remaining oat mixture over the blueberries.
- Bake for 35–40 minutes, or until the top is lightly golden and the blueberry filling is bubbling.
- Cool completely in the pan before slicing into bars.
Tips
- Fresh or frozen blueberries both work well. If using frozen, do not thaw them first.
- Let the bars cool completely so they hold their shape when cut.
- Add chopped almonds or walnuts to the topping for extra crunch.
- For a sweeter dessert, drizzle with a simple lemon glaze after cooling.
