Ingredients
For the Lamb Chops
- 8 lamb loin or shoulder chops (about 2½ pounds/1.1 kg)
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
For the Gravy
- 1 large onion, sliced
- 4 cloves garlic, minced
- 2 cups (480 ml) beef or lamb broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard (optional)
- 2 tablespoons all-purpose flour
- 2 tablespoons water
Garnish
- Chopped fresh parsley
- Fresh rosemary sprigs (optional)
Instructions
- Season the lamb chops with the salt, black pepper, garlic powder, onion powder, smoked paprika, rosemary, and thyme.
- Heat the olive oil in a large skillet over medium-high heat.
- Sear the lamb chops for 2–3 minutes per side until nicely browned. Transfer them to the slow cooker.
- Arrange the sliced onion and minced garlic over the lamb chops.
- In a bowl, whisk together the broth, tomato paste, Worcestershire sauce, and Dijon mustard (if using). Pour the mixture over the lamb.
- Cover and cook on Low for 6–8 hours or High for 3–4 hours, until the lamb is fork-tender.
- Remove the lamb chops and keep them warm.
- In a small bowl, mix the flour and water into a smooth slurry.
- Stir the slurry into the cooking liquid and cook on High for 10–15 minutes, or until the gravy thickens.
- Return the lamb chops to the slow cooker and spoon the gravy over the top.
- Garnish with chopped parsley and fresh rosemary before serving.
