Ingredients
- 2 lbs (900 g) boneless, skinless chicken thighs or breasts
- 1½ lbs (700 g) baby potatoes, halved
- 4 cloves garlic, minced
- 1 cup (100 g) grated Parmesan cheese
- 1 cup (240 ml) chicken broth
- ½ cup (120 ml) heavy cream
- 4 tbsp unsalted butter, melted
- 1 tsp Italian seasoning
- 1 tsp paprika
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp chopped fresh parsley, for garnish
Instructions
Step 1: Prepare the Ingredients
- Lightly grease the slow cooker.
- Place the halved baby potatoes in the bottom.
- Arrange the chicken on top of the potatoes.
Step 2: Make the Garlic Parmesan Sauce
In a bowl, whisk together:
- Chicken broth
- Heavy cream
- Melted butter
- Garlic
- Parmesan cheese
- Italian seasoning
- Paprika
- Onion powder
- Salt and pepper
Pour the sauce evenly over the chicken and potatoes.
Step 3: Slow Cook
- Low: 6–7 hours
- High: 3–4 hours
The chicken is done when it reaches an internal temperature of 165°F (74°C) and the potatoes are fork-tender.
Step 4: Finish
- Gently stir the potatoes into the sauce.
- Spoon the creamy garlic Parmesan sauce over the chicken.
- Sprinkle with fresh parsley and, if desired, extra grated Parmesan.
Optional Add-Ins
- 1 cup broccoli florets (add during the last 30 minutes)
- 1 cup sliced mushrooms
- 2 cups fresh spinach (stir in during the last 10 minutes)
- A pinch of red pepper flakes for a little heat
Tips
- Chicken thighs stay especially juicy during slow cooking.
- For a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir it into the slow cooker during the last 20–30 minutes on High.
- Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
- Leftovers keep in the refrigerator for 3–4 days and reheat well.
