Slow Cooker 3-Ingredient Potatoes
These buttery, tender potatoes make an easy side dish with almost no prep.
Ingredients
- 2 lbs (900 g) baby potatoes (or potatoes cut into 1-inch chunks)
- 1 packet (1 oz) ranch seasoning mix
- ¼ cup (60 g) unsalted butter, melted
Instructions
- Wash the potatoes and place them in your slow cooker. If using larger potatoes, cut them into evenly sized chunks.
- Pour the melted butter over the potatoes.
- Sprinkle the ranch seasoning over the top and toss to coat evenly.
- Cover and cook:
- Low: 5–6 hours
- High: 2½–3½ hours
- Stir once before serving and garnish with chopped parsley if desired.
Optional Add-Ins
- ½ cup shredded cheddar cheese during the last 15 minutes
- Crispy cooked bacon bits
- Chopped green onions
- A sprinkle of grated Parmesan
- Minced garlic for extra flavor
Storage
- Refrigerator: Store in an airtight container for up to 4 days.
- Reheat: Microwave or warm in a covered skillet with a splash of butter.
- Freezer: Freeze for up to 2 months, though the texture may become slightly softer after thawing.
These potatoes pair well with slow cooker chicken and gravy, pot roast, meatloaf, grilled steak, or roasted chicken.
