Oven-Roasted Sweet Potatoes

Ingredients
- 2 large sweet potatoes (about 2 lb/900 g), peeled or scrubbed well
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon dried thyme or rosemary (optional)
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- Line a baking sheet with parchment paper or lightly grease it.
- Cut the sweet potatoes into 1-inch (2.5 cm) cubes.
- In a large bowl, toss the cubes with the olive oil, garlic powder, smoked paprika, onion powder, salt, pepper, and thyme until evenly coated.
- Spread the sweet potatoes in a single layer on the prepared baking sheet, leaving a little space between the pieces.
- Roast for 30–35 minutes, flipping halfway through, until the edges are golden and caramelized and the centers are fork-tender.
- Sprinkle with fresh parsley before serving.

- Sweet & Spiced: Add 1 tablespoon maple syrup and ½ teaspoon cinnamon before roasting.
- Spicy: Toss with ¼ teaspoon cayenne pepper or chili flakes.
