Ingredients
- 1 cup (225 g) cottage cheese
- 3 ripe bananas, mashed
- 2 large eggs
- ¼ cup (60 ml) honey or maple syrup
- 1 teaspoon vanilla extract
- 2 cups (250 g) all-purpose flour (or whole wheat flour)
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg (optional)
- ½ cup (60 g) chopped walnuts or pecans (optional)
- ½ cup (90 g) dark chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
- In a blender or food processor, blend the cottage cheese until smooth.
- In a large bowl, whisk together the blended cottage cheese, mashed bananas, eggs, honey, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually fold the dry ingredients into the wet ingredients, mixing just until combined. Do not overmix.
- Fold in the walnuts and chocolate chips, if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
