Crispy Roasted Pork Belly
This crispy roasted pork belly has irresistibly crunchy crackling and juicy, flavorful meat. It’s perfect for a special dinner or holiday meal and pairs well with roasted vegetables, mashed potatoes, or rice.
Ingredients
- 2 lb (900 g) pork belly, skin on
- 1 tablespoon olive oil
- 2 teaspoons kosher salt (plus extra for the skin)
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme or rosemary (optional)
Instructions
- Pat the pork belly completely dry with paper towels. Score the skin with a sharp knife, cutting through the skin but not into the meat.
- Rub the meat side with the olive oil, salt, pepper, garlic powder, onion powder, smoked paprika, and thyme.
- Rub extra salt into the scored skin.
- Place the pork belly uncovered on a rack in the refrigerator for 8–24 hours to help dry the skin for extra-crispy crackling (optional, but recommended).
- Preheat the oven to 450°F (230°C).
- Place the pork belly skin-side up on a wire rack set over a baking tray.
- Roast for 30 minutes to blister and crisp the skin.
- Reduce the oven temperature to 325°F (163°C) and continue roasting for 60–75 minutes, or until the meat is tender and the internal temperature reaches at least 190°F (88°C) for a melt-in-your-mouth texture.
- If needed, broil for 2–3 minutes to further crisp the crackling, watching carefully to prevent burning.
- Let the pork belly rest for 10–15 minutes before slicing.
