Ingredients
For the Crust Layer
- 1½ cups graham cracker crumbs
- ¼ cup unsalted butter, melted
- 2 tablespoons granulated sugar
For the Lime Filling
- 8 oz (225 g) cream cheese, softened
- 1 can (14 oz / 397 g) sweetened condensed milk
- ⅓ cup fresh lime juice
- 1 tablespoon lime zest
- 1 teaspoon vanilla extract
For the Whipped Cream
- 1 cup (240 ml) heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Optional Garnish
- Lime slices
- Extra lime zest
- Graham cracker crumbs
- Fresh mint leaves
Instructions
- In a bowl, mix the graham cracker crumbs, melted butter, and sugar until evenly combined.
- In another bowl, beat the cream cheese until smooth.
- Add the sweetened condensed milk, lime juice, lime zest, and vanilla. Beat until creamy.
- In a separate bowl, whip the heavy cream with the powdered sugar and vanilla until stiff peaks form.
- Fold half of the whipped cream into the lime mixture to make it light and fluffy.
- Layer the parfaits in serving glasses:
- Graham cracker mixture
- Lime filling
- Whipped cream
- Repeat the layers if desired.
- Chill for 1–2 hours before serving.
- Garnish with lime zest, lime slices, extra crumbs, or fresh mint.
