Italian Chicken Sausages and Potatoes
This easy one-pan Italian Chicken Sausages and Potatoes recipe features juicy chicken sausages, crispy roasted potatoes, peppers, and onions tossed with Italian herbs. It’s a hearty, flavorful dinner that’s ready in about 45 minutes.
Ingredients (Serves 4)
- 1½ lb (680 g) Italian chicken sausages (sweet or spicy)
- 1½ lb (680 g) baby potatoes, halved
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 medium red onion, cut into wedges
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons grated Parmesan cheese (optional)
- 2 tablespoons chopped fresh parsley
- Lemon wedges, for serving (optional)
Instructions
- Preheat the oven
- Preheat the oven to 425°F (220°C).
- Lightly grease or line a large baking sheet with parchment paper.
- Season the vegetables
- In a large bowl, toss the potatoes, bell peppers, and onion with the olive oil, garlic, Italian seasoning, oregano, paprika, garlic powder, salt, and black pepper.
- Arrange on the pan
- Spread the vegetables in a single layer on the baking sheet.
- Nestle the chicken sausages among the vegetables.
- Roast
- Bake for 20 minutes.
- Turn the sausages and stir the vegetables.
- Continue baking for 15–20 minutes, or until the potatoes are tender, the vegetables are lightly caramelized, and the sausages reach an internal temperature of 165°F (74°C).
- Finish
- Sprinkle with Parmesan cheese, if using.
- Garnish with chopped parsley.
- Serve
- Serve hot with lemon wedges for squeezing over the top, if desired.
