This Easy Gluten-Free Bread is soft, fluffy, and perfect for sandwiches, toast, or enjoying fresh with butter. With a tender crumb and golden crust, this homemade loaf is simple to make and delicious every time.
Ingredients
- 3 cups (360 g) gluten-free all-purpose flour blend (with xanthan gum)
- 2¼ tsp (1 packet) instant yeast
- 2 tbsp granulated sugar or honey
- 1 tsp salt
- 1¼ cups (300 ml) warm milk (110°F/43°C) or warm water
- 2 large eggs, room temperature
- ¼ cup (60 ml) olive oil or melted butter
- 1 tsp apple cider vinegar

Instructions
- Grease a 9×5-inch (23×13 cm) loaf pan and line it with parchment paper.
- In a large bowl, whisk together the gluten-free flour, yeast, sugar, and salt.
- In a separate bowl, whisk together the warm milk, eggs, olive oil, and apple cider vinegar.
- Add the wet ingredients to the dry ingredients and beat with an electric mixer for 3–5 minutes until a thick, smooth batter forms. Gluten-free bread dough is more like a thick batter than a traditional dough.
- Spread the batter evenly into the prepared loaf pan and smooth the top with a wet spatula.
- Cover loosely and let rise in a warm place for 30–45 minutes, or until the batter rises just above the rim of the pan.
- Preheat the oven to 375°F (190°C).
- Sprinkle with your preferred topping, if using.
- Bake for 40–45 minutes, or until the loaf is golden brown and the internal temperature reaches 205°F (96°C).
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Tips
- Use a quality gluten-free flour blend that contains xanthan gum. If it doesn’t, add 1 teaspoon xanthan gum.
