Funfetti Cake
This Funfetti Cake is soft, moist, and filled with colorful rainbow sprinkles. Topped with a fluffy vanilla buttercream frosting, it’s the perfect cake for birthdays, celebrations, or any occasion that calls for a little extra fun!
Ingredients
For the Cake
- 2½ cups (315 g) all-purpose flour
- 2½ teaspoons baking powder
- ½ teaspoon salt
- ¾ cup (170 g) unsalted butter, softened
- 1½ cups (300 g) granulated sugar
- 4 large eggs, room temperature
- 1 tablespoon vanilla extract
- 1 cup (240 ml) whole milk
- ½ cup (90 g) rainbow jimmies sprinkles (avoid nonpareils)
Vanilla Buttercream Frosting
- 1 cup (225 g) unsalted butter, softened
- 4 cups (480 g) powdered sugar
- 2–3 tablespoons heavy cream or milk
- 2 teaspoons vanilla extract
- Pinch of salt
Decoration
- Extra rainbow sprinkles
- Whipped cream (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and line two 8-inch (20 cm) round cake pans with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the butter and sugar until light and fluffy, about 3–4 minutes.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla.
- Add the dry ingredients in three additions, alternating with the milk, beginning and ending with the flour mixture. Mix just until combined.
- Gently fold in the rainbow sprinkles with a spatula.
- Divide the batter evenly between the prepared pans.
- Bake for 28–32 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat the butter until creamy. Gradually add the powdered sugar, then mix in the vanilla, salt, and enough cream to achieve a smooth, spreadable consistency.
- Frost the cooled cakes and decorate generously with extra sprinkles.

Tips
- Use rainbow jimmies sprinkles rather than nonpareils, as they hold their color better during baking.
- Avoid overmixing the batter after adding the sprinkles to prevent color bleeding.
- Bring all refrigerated ingredients to room temperature for a lighter, more even-textured cake.
- Store the frosted cake covered at room temperature for up to 2 days or refrigerate for up to 5 days. Let it come to room temperature before serving for the best flavor and texture.
