Fried Bologna Sandwich

Ingredients
- 4 slices thick-cut bologna
- 4 slices white bread or Texas toast
- 2 tablespoons unsalted butter, softened
- 2 slices American or cheddar cheese
- 1 tablespoon mayonnaise (optional)
- 1 tablespoon yellow mustard
- 2 lettuce leaves (optional)
- 2 tomato slices (optional)
- Dill pickle slices, for serving
Instructions
- Spread the butter evenly on one side of each slice of bread.
- Cut a small “X” in the center of each slice of bologna to prevent it from curling while cooking.
- Heat a large skillet or griddle over medium heat.
- Fry the bologna for 2–3 minutes per side, until browned and slightly crispy around the edges.
- Place a slice of cheese on two of the bologna slices during the last minute of cooking and let it melt.
- Toast the buttered bread in the same skillet until golden brown, about 1–2 minutes per side.
- Spread mayonnaise (if using) and mustard on the toasted bread.
- Layer two slices of fried bologna on each sandwich, then add lettuce and tomato if desired.
- Top with the remaining slices of toasted bread and serve immediately.
