Ingredients
- 3 cups (360 g) gluten-free all-purpose flour blend (with xanthan gum)
- 2¼ tsp (1 packet) instant yeast
- 2 tbsp granulated sugar or honey
- 1 tsp salt
- 1¼ cups (300 ml) warm milk (110°F/43°C) or unsweetened almond milk
- 2 large eggs, room temperature
- ¼ cup (60 ml) olive oil or melted butter
- 1 tsp apple cider vinegar
Optional Topping
- 1 tbsp sesame seeds
- 1 tbsp rolled oats (certified gluten-free)
Instructions
- Grease a 9×5-inch (23×13 cm) loaf pan and line it with parchment paper.
- In a large mixing bowl, combine the gluten-free flour, instant yeast, sugar, and salt.
- In a separate bowl, whisk together the warm milk, eggs, olive oil, and apple cider vinegar.
- Pour the wet ingredients into the dry ingredients and beat with an electric mixer on medium speed for 3–5 minutes. The batter will be thicker than cake batter but softer than traditional bread dough.
- Transfer the batter to the prepared loaf pan and smooth the top with a spatula dipped in water.
- Cover loosely with a clean kitchen towel and let rise in a warm place for 30–45 minutes, or until the batter has risen to just above the rim of the pan.
- Preheat the oven to 375°F (190°C).
- Sprinkle with sesame seeds or gluten-free oats, if desired.
- Bake for 40–45 minutes, or until the loaf is golden brown and the internal temperature reaches 205°F (96°C).
- Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
