Ingredients
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups green cabbage, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 bell pepper, diced
- 1 can (14.5 oz / 410 g) diced tomatoes
- 6 cups (1.4 L) vegetable or chicken broth
- 1 tbsp tomato paste
- 1 tsp Italian seasoning
- 1 tsp paprika
- 1 bay leaf
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- 1 tbsp lemon juice (optional)
- 2 tbsp chopped fresh parsley
Instructions
- Heat the olive oil in a large soup pot over medium heat.
- Add the onion, carrots, celery, and bell pepper. Cook for 5–6 minutes, stirring occasionally, until softened.
- Stir in the garlic and cook for 30 seconds, until fragrant.
- Add the chopped cabbage and cook for 3–4 minutes, stirring until it begins to wilt.
- Stir in the diced tomatoes, tomato paste, broth, Italian seasoning, paprika, bay leaf, salt, and black pepper.
- Bring the soup to a boil, then reduce the heat to low.
- Cover and simmer for 25–30 minutes, or until the vegetables are tender.
- Remove the bay leaf, stir in the lemon juice (if using), and garnish with fresh parsley.
- Serve hot with your favorite bread or crackers.
