Whole Wheat Bread made in a slow cooker can be a better choice for people with diabetes because it’s higher in fiber than white bread. While no bread is truly “diabetic bread,” choosing whole grains, controlling portion sizes, and pairing bread with protein and healthy fats can help support steadier blood sugar levels. This recipe makes 1 loaf (10–12 slices).
Ingredients
- 2 cups (240 g) whole wheat flour
- 1 cup (120 g) bread flour
- 2¼ tsp (1 packet) active dry yeast
- 1 tsp salt
- 1 tsp sugar or honey (to activate the yeast)
- 1 tbsp olive oil
- 1 cup (240 ml) warm water (105–110°F / 40–43°C)
- 2 tbsp ground flaxseed
- 2 tbsp chia seeds (optional)
- 1 tbsp rolled oats (optional, for topping)
Instructions
- In a large bowl, combine the warm water, sugar or honey, and yeast. Let stand for 5–10 minutes until foamy.
- Stir in the olive oil.
- Add the whole wheat flour, bread flour, salt, flaxseed, and chia seeds. Mix until a dough forms.
- Knead the dough for 8–10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
- Shape the dough into a round loaf that will fit inside your slow cooker. Sprinkle with rolled oats if desired.
- Line the slow cooker with parchment paper and place the dough inside.
- Cover the slow cooker with a clean kitchen towel, then place the lid on top. The towel helps absorb excess moisture.
- Cook on High for 2–2½ hours, or until the bread reaches an internal temperature of 190–200°F (88–93°C).
- For a browned crust, transfer the loaf to a baking sheet and broil for 3–5 minutes, watching carefully to prevent burning.
- Cool completely on a wire rack before slicing.
Nutrition Tips
- Use 100% whole wheat flour for more fiber.
- Flaxseed and chia seeds add fiber and healthy fats.
- Slice the loaf thinly and enjoy it with protein-rich toppings such as eggs, cottage cheese, natural peanut butter, or avocado.
- Avoid adding dried fruit or extra sweeteners if you’re aiming to minimize added sugars.
