Ingredients
- 2 medium zucchini, sliced into ¼-inch (6 mm) rounds

- 1 tsp Italian seasoning

Instructions
- Wash and dry the zucchini, then slice into ¼-inch (6 mm) rounds.
- Pat the slices dry with paper towels to remove excess moisture.
- In a shallow bowl, combine the Parmesan, panko, garlic powder, Italian seasoning, paprika, salt, and black pepper.
- Place the beaten egg in a separate shallow bowl.
- Dip each zucchini round into the egg, then coat thoroughly in the Parmesan breadcrumb mixture.
- Preheat the air fryer to 400°F (200°C) for 3–5 minutes.
- Lightly spray the air fryer basket with cooking spray. Arrange the zucchini rounds in a single layer without overlapping, then lightly spray the tops.
- Air fry for 8–10 minutes, flipping halfway through cooking, until golden brown and crispy.
- If needed, cook for an additional 1–2 minutes for extra crispiness.
- Garnish with chopped parsley and serve immediately.
