Crispy Garlic Parmesan Roasted Baby Potatoes
These crispy roasted baby potatoes have a golden Parmesan crust, fluffy centers, and plenty of garlic flavor. They’re the perfect side dish for chicken, steak, fish, or seafood.
Ingredients (Serves 4–6)
- 2 lb (900 g) baby potatoes, halved (or quartered if large)
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- ½ cup (50 g) grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- Optional: 1 tablespoon melted butter for extra richness
Instructions
- Preheat the oven
- Heat oven to 425°F (220°C).
- Line a baking sheet with parchment paper or lightly grease it.
- Prepare the potatoes
- Wash and dry the baby potatoes well.
- Cut them into even-sized halves.
- Season
- In a large bowl, toss the potatoes with:
- Olive oil
- Garlic
- Garlic powder
- Onion powder
- Italian seasoning
- Paprika
- Salt and pepper
- Parmesan cheese
- In a large bowl, toss the potatoes with:
- Arrange for crispiness
- Place the potatoes cut-side down in a single layer on the baking sheet.
- Sprinkle any remaining Parmesan from the bowl over the potatoes.
- Roast
- Roast for 25–35 minutes, depending on size.
- The potatoes should be tender inside and deeply golden underneath.
- Finish
- If using, drizzle with melted butter immediately after roasting.
- Sprinkle with fresh parsley and a little extra Parmesan.
Optional Garlic Butter Finish
Mix together:
- 2 tablespoons melted butter
- 1 minced garlic clove
- 1 tablespoon chopped parsley
Brush over the hot potatoes just before serving.
