Ingredients
For the Cottage Cheese Crust
- 1½ cups (340 g) cottage cheese
- 2 large eggs
- ½ cup (50 g) grated Parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon Italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon black pepper
For the Toppings
- ½ cup (120 ml) pizza sauce
- 1½ cups (170 g) shredded mozzarella cheese
- ¼ cup sliced pepperoni (optional)
- ½ cup sliced mushrooms
- ¼ cup diced bell peppers
- ¼ cup sliced black olives
- ¼ cup thinly sliced red onion
Garnish
- Fresh basil leaves
- Crushed red pepper flakes (optional)
- Grated Parmesan cheese
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet or pizza pan with parchment paper.
- Blend the cottage cheese in a food processor or blender until smooth.
- In a large bowl, combine the blended cottage cheese, eggs, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and black pepper.
- Spread the mixture into a 10–12-inch circle on the prepared baking sheet, about ¼ inch thick.
- Bake the crust for 20–22 minutes, or until golden brown and firm.
- Remove the crust from the oven and carefully spread the pizza sauce over the top.
- Sprinkle with the mozzarella cheese and add your desired toppings.
- Return the pizza to the oven and bake for another 5–8 minutes, until the cheese is melted and bubbly.
- Let the pizza rest for 5 minutes before slicing.
- Garnish with fresh basil, Parmesan cheese, and red pepper flakes, if desired.
