Crispy Air Fryer Scotch Eggs
These Crispy Air Fryer Scotch Eggs feature perfectly cooked eggs wrapped in seasoned sausage, coated in crispy breadcrumbs, and air-fried until golden brown. They’re perfect for breakfast, brunch, picnics, or a protein-packed snack.
Ingredients
- 6 large eggs
- 1 lb (450 g) breakfast sausage or pork sausage, casings removed
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Cooking oil spray

Instructions
- Place the 6 eggs in boiling water and cook for 6–7 minutes for jammy yolks or 9 minutes for firmer yolks. Transfer immediately to an ice bath, then peel carefully.
- Divide the sausage into 6 equal portions.
- Flatten one portion of sausage into a thin oval. Place a peeled egg in the center and wrap the sausage completely around it, sealing any seams. Repeat with the remaining eggs.
- In one bowl, place the flour.
- In a second bowl, beat the 2 eggs.
- In a third bowl, combine the panko breadcrumbs, garlic powder, onion powder, paprika, thyme, salt, and black pepper.
- Roll each sausage-covered egg in the flour, dip into the beaten eggs, then coat thoroughly with the breadcrumb mixture.
- Preheat the air fryer to 375°F (190°C) for 3 minutes.
- Lightly spray the Scotch eggs with cooking oil and place them in the air fryer basket, leaving space between each one.
- Air fry for 12–15 minutes, turning halfway through, until the sausage is fully cooked (internal temperature of 160°F/71°C for pork sausage) and the coating is crisp and golden.
- Let rest for 3–5 minutes before slicing and serving.
