Creamy Shrimp Rolls

Ingredients
For the Shrimp Filling
- 1 lb (450 g) cooked medium shrimp, peeled, deveined, and roughly chopped
- ⅓ cup (80 g) mayonnaise
- 2 tbsp plain Greek yogurt or sour cream
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 celery stalk, finely diced
- 2 tbsp finely chopped chives or green onions
- 1 tbsp chopped fresh dill or parsley
- ½ tsp garlic powder
- ¼ tsp paprika
- Salt and black pepper, to taste
For the Rolls
- 4 brioche or New England-style hot dog buns
- 2 tbsp butter, softened
- 4 lettuce leaves (optional)

- Lemon wedges
- Extra chopped chives
- Paprika
- Fresh dill
Instructions
- In a large bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, garlic powder, paprika, salt, and black pepper.
- Fold in the chopped shrimp, celery, chives, and dill until evenly coated.
- Cover and refrigerate the shrimp mixture for 15–20 minutes to allow the flavors to blend.
- Heat a skillet over medium heat and butter the outside of each bun.
- Toast the buns for 1–2 minutes per side, until golden and lightly crisp.
- Line each bun with a lettuce leaf, if using.
- Spoon the chilled shrimp mixture evenly into the toasted buns.
- Garnish with extra herbs, a sprinkle of paprika, and serve with lemon wedges.
