Instructions
- Whisk the eggs
- Crack the eggs into a bowl.
- Add the milk (if using), salt, and pepper.
- Whisk vigorously for 30–60 seconds until smooth and slightly frothy.
- Heat the pan
- Place a nonstick skillet over low heat.
- Add the olive oil or butter and let it melt without browning.
- Cook gently
- Pour the eggs into the skillet.
- Let them sit undisturbed for about 20–30 seconds.
- Using a silicone spatula, gently push the eggs from the edges toward the center, creating large, soft folds.
- Continue stirring slowly every few seconds over low heat.
- Finish
- Remove the pan from the heat while the eggs still look slightly glossy and softly set—they will continue to cook from the residual heat.
