Creamy Crockpot Chicken & Stuffing

Ingredients
- 2 pounds (900 g) boneless, skinless chicken breasts or thighs
- 1 box (6 oz/170 g) chicken stuffing mix
- 1 can (10.5 oz/300 g) cream of chicken soup
- ½ cup (120 ml) sour cream
- ½ cup (120 ml) chicken broth
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon dried parsley
- ½ teaspoon black pepper
- 1 cup frozen mixed vegetables (optional)
- 2 tablespoons butter, cut into small pieces
Instructions
- Lightly grease the crockpot with nonstick cooking spray.
- Arrange the chicken in an even layer in the bottom of the slow cooker.
- Season the chicken with the garlic powder, onion powder, parsley, and black pepper.
- In a medium bowl, whisk together the cream of chicken soup, sour cream, and chicken broth until smooth.
- Pour the soup mixture evenly over the chicken.
- If using, sprinkle the frozen mixed vegetables over the soup mixture.
- Evenly distribute the dry stuffing mix over the top—do not stir.
- Dot the stuffing with the butter pieces.
- Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the chicken is tender and reaches an internal temperature of 165°F (74°C).
- Before serving, shred or chop the chicken into bite-sized pieces and gently mix everything together.
