- 1 tbsp butter or olive oil
- ½ medium green cabbage, thinly sliced (about 4 cups)
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 4 large eggs
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ¼ tsp red pepper flakes (optional)
- 2 tbsp chopped fresh parsley or green onions, for garnish

Instructions
- Heat the butter or olive oil in a large skillet over medium heat.
- Add the onion and cook for 3–4 minutes, until softened.
- Stir in the garlic and cook for 30 seconds, until fragrant.
- Add the sliced cabbage, salt, pepper, paprika, and red pepper flakes (if using). Cook for 8–10 minutes, stirring occasionally, until the cabbage is tender and lightly browned.
- If using cheese, sprinkle it evenly over the cabbage.
- Make 4 small wells in the cabbage mixture and crack one egg into each well.
- Cover the skillet with a lid and cook for 4–6 minutes, or until the egg whites are set and the yolks are cooked to your preference.
