Ingredients
- 1 package (3.4 ounces/96 g) instant pistachio pudding mix
- 1 can (20 ounces/565 g) crushed pineapple, with its juice
- 1 container (8 ounces/225 g) whipped topping, thawed
- 2 cups mini marshmallows
- ½ cup chopped pecans (or walnuts)
- ½ teaspoon vanilla extract (optional)
- ¼ cup shredded sweetened coconut (optional)

Instructions
- In a large mixing bowl, combine the dry pistachio pudding mix with the crushed pineapple and its juice. Stir until the pudding mix is fully dissolved and begins to thicken.
- Fold in the whipped topping until the mixture is smooth and evenly combined.
- Add the mini marshmallows, chopped pecans, vanilla extract, and shredded coconut, if using. Gently fold everything together.
- Cover the bowl and refrigerate for at least 1 hour to allow the flavors to blend and the salad to set.
- Stir gently before serving.
- Garnish with additional chopped pecans, maraschino cherries, mint leaves, or extra marshmallows if desired.
