Ingredients
For the Steaks
- 4 sirloin, ribeye, or New York strip steaks (8 ounces/225 g each)
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 teaspoons freshly cracked black pepper
- 1 teaspoon kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika (optional)
- 2 sprigs fresh thyme (optional)
For the Caramelized Onions
- 3 large yellow onions, thinly sliced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon brown sugar (optional)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 cloves garlic, minced
- 2 tablespoons beef broth or balsamic vinegar (optional, for deglazing)
Garnish
- Fresh parsley, chopped
- Extra cracked black pepper
Instructions
- Pat the steaks dry with paper towels. Season both sides with the salt, black pepper, garlic powder, onion powder, and smoked paprika, if using.
- Heat 2 tablespoons butter and 1 tablespoon olive oil in a large skillet over medium-low heat.
- Add the sliced onions and cook, stirring occasionally, for 20–25 minutes, until soft and deeply golden.
- Stir in the brown sugar (if using), garlic, and beef broth or balsamic vinegar. Cook for another 2–3 minutes, then transfer the onions to a bowl and keep warm.
- Increase the heat to medium-high. Add the remaining olive oil to the skillet.
- Sear the steaks for 3–5 minutes per side, depending on thickness and your preferred doneness.
- During the final minute of cooking, add the remaining butter and thyme sprigs. Spoon the melted butter over the steaks continuously.
- Transfer the steaks to a plate and let them rest for 10 minutes.
- Top each steak generously with the caramelized onions.
- Garnish with chopped parsley and an extra sprinkle of cracked black pepper before serving.
