Ingredients
- 8 large eggs
- ½ cup (120 ml) milk
- ½ cup (120 ml) heavy cream (or use more milk)
- 1½ cups shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh chives
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes (optional)
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9-inch (23 cm) pie dish or baking dish.
- Heat the olive oil in a skillet over medium heat. Sauté the onion for 3–4 minutes until softened. Add the garlic and cook for 30 seconds.
- Stir in the chopped spinach and cook for 1–2 minutes, just until wilted. Remove from the heat and let cool slightly.
- In a large bowl, whisk together the eggs, milk, cream, salt, pepper, oregano, parsley, and chives.
- Stir in the cheddar cheese, Parmesan, and the cooked spinach mixture.
- Pour the mixture into the prepared pie dish and spread it evenly.
- Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
- Let the pie rest for 5–10 minutes before slicing and serving.
