Soft, buttery rolls stuffed with juicy garlic shrimp and melty mozzarella, then brushed with a rich garlic herb butter and baked until golden brown. These cheesy stuffed rolls are perfect as an appetizer, party snack, or satisfying main dish.

Ingredients
For the Rolls
- 8 soft dinner rolls or brioche rolls
- 1 pound (450 g) medium shrimp, peeled, deveined, and chopped
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon paprika
- ½ teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1½ cups (170 g) shredded mozzarella cheese
- ½ cup (50 g) grated Parmesan cheese
For the Garlic Butter
- 3 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
- ½ teaspoon garlic powder

- Extra grated Parmesan
Instructions
- Preheat the oven to 375°F (190°C). Line a baking tray with parchment paper.
- Slice the tops off the dinner rolls and carefully hollow out a small portion of the center, leaving the bottoms intact.
- Heat the olive oil and 2 tablespoons butter in a skillet over medium heat.
- Add the garlic and cook for 30 seconds, until fragrant.
- Stir in the chopped shrimp, paprika, Italian seasoning, salt, and black pepper. Cook for 2–3 minutes, just until the shrimp turn pink. Remove from the heat.
- Mix the mozzarella and Parmesan cheeses together.
- Fill each roll with a layer of cheese, a spoonful of the shrimp mixture, and another layer of cheese.
- Replace the tops of the rolls and arrange them on the prepared baking tray.
- In a small bowl, combine the melted butter, garlic, parsley, and garlic powder. Brush generously over the tops of the rolls.
- Bake for 18–22 minutes, until the rolls are golden and the cheese is melted and bubbly.
- Garnish with chopped parsley, red pepper flakes, and extra Parmesan if desired.
