Classic Carrot Cake
This moist, warmly spiced carrot cake is packed with freshly grated carrots and topped with a rich cream cheese frosting.

Ingredients
For the Cake
- 2 cups (250 g) all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1½ teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger (optional)
- ½ teaspoon salt
- 1 cup (200 g) granulated sugar
- ½ cup (100 g) brown sugar
- ¾ cup (180 ml) vegetable oil
- 4 large eggs
- 2 teaspoons vanilla extract
- 3 cups (300 g) finely grated carrots
- ½ cup chopped walnuts or pecans (optional)
- ½ cup raisins (optional)
Cream Cheese Frosting
- 8 oz (225 g) cream cheese, softened
- ¼ cup (55 g) unsalted butter, softened
- 2½–3 cups (300–360 g) powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Grease and line two 8-inch (20 cm) round cake pans.
- In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In a separate large bowl, beat the granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
- Gradually add the dry ingredients to the wet ingredients and mix just until combined.
- Fold in the grated carrots, nuts, and raisins (if using).
- Divide the batter evenly between the prepared pans.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Make the Frosting
- Beat the cream cheese and butter until smooth and creamy.
- Gradually add the powdered sugar, then mix in the vanilla and salt.
- Beat until light and fluffy.
Assemble
- Spread frosting over one cake layer.
- Place the second layer on top and frost the top and sides.
- Garnish with chopped walnuts, pecans, or shredded carrots if desired.
