Cabbage and Eggs – Crispy Fritters

Ingredients
- 4 cups (300 g) finely shredded green cabbage
- 3 large eggs
- ½ cup (65 g) all-purpose flour
- ¼ cup (25 g) grated Parmesan cheese (optional)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 green onions, thinly sliced
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- 2–3 tablespoons vegetable oil, for frying
Optional Dipping Sauce
- ½ cup sour cream or Greek yogurt
- 1 teaspoon lemon juice
- 1 teaspoon chopped fresh dill or parsley
- Salt and black pepper, to taste
Instructions
- Place the shredded cabbage in a large bowl. Sprinkle with ½ teaspoon salt and let it sit for 10 minutes. Squeeze out any excess moisture with a clean kitchen towel.
- Add the eggs, flour, Parmesan cheese (if using), onion, garlic, green onions, baking powder, garlic powder, paprika, the remaining salt, black pepper, and parsley. Mix until well combined.
- Heat the vegetable oil in a large nonstick skillet over medium heat.
- Scoop about ¼ cup of the cabbage mixture into the skillet for each fritter. Flatten gently with the back of a spatula.
- Cook for 3–4 minutes per side, or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain any excess oil.
- For the dipping sauce, stir together the sour cream, lemon juice, dill, salt, and pepper.
- Serve the fritters hot with the dipping sauce.
