Buttermilk Biscuits with Sausage Gravy

Ingredients
For the Buttermilk Biscuits
- 2 cups (250 g) all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- ½ cup (115 g) cold unsalted butter, cubed
- ¾ cup (180 ml) cold buttermilk
For the Sausage Gravy
- 1 lb (450 g) breakfast sausage
- ¼ cup (30 g) all-purpose flour
- 2½ cups (600 ml) whole milk
- ½ teaspoon garlic powder (optional)
- ½ teaspoon onion powder (optional)
- ½ teaspoon black pepper
- Salt, to taste
Instructions
Make the Biscuits
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- Cut the cold butter into the flour using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
- Pour in the buttermilk and stir just until a soft dough forms.
- Turn the dough onto a lightly floured surface. Gently pat it to about 1 inch (2.5 cm) thick, then fold it over 3–4 times to create flaky layers.
- Cut out biscuits using a 2½-inch (6 cm) biscuit cutter. Place them on the prepared baking sheet with the sides just touching.
- Bake for 12–15 minutes, until golden brown.
Make the Sausage Gravy
- While the biscuits bake, cook the sausage in a large skillet over medium heat, breaking it into crumbles.
- Leave about 2–3 tablespoons of the rendered fat in the pan. Sprinkle the flour over the sausage and stir for 1–2 minutes.
- Gradually whisk in the milk until smooth.
- Add the garlic powder, onion powder, and black pepper.
- Simmer for 5–8 minutes, stirring often, until the gravy thickens. Add salt if needed.
Serve
Split the warm biscuits in half and generously spoon the hot sausage gravy over the top.
Tips
- Keep the butter and buttermilk very cold for the flakiest biscuits.
- Don’t overmix the dough—mix just until it comes together.
- If the gravy gets too thick, whisk in a little extra milk until it reaches your preferred consistency.
- Add a pinch of cayenne pepper or crushed red pepper flakes for a spicy kick.
