Blueberry Protein Breakfast Bake

Ingredients
- 2 cups (180 g) rolled oats
- 1 scoop (about 30 g) vanilla protein powder
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 large eggs
- 1 cup (240 ml) milk (dairy or unsweetened almond milk)
- ½ cup (120 g) plain or vanilla Greek yogurt
- 2 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- 1½ cups (225 g) fresh or frozen blueberries
- 1 tablespoon chia seeds (optional)
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch (20×20 cm) baking dish.
- In a large bowl, whisk together the oats, protein powder, baking powder, cinnamon, salt, and chia seeds (if using).
- In a separate bowl, whisk the eggs, milk, Greek yogurt, maple syrup, and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients and stir until fully combined.
- Gently fold in 1 cup of the blueberries.
- Pour the mixture into the prepared baking dish and spread evenly.
- Sprinkle the remaining ½ cup of blueberries over the top.
- Bake for 35–40 minutes, or until the center is set and a toothpick inserted into the middle comes out clean.
- Let the bake cool for 5–10 minutes before slicing.
