Ingredients
For the Chocolate Cookie Crust
- 2 cups (220 g) chocolate cookie crumbs
- ½ cup (115 g) unsalted butter, melted
- 2 tablespoons granulated sugar
For the Chocolate Cheesecake Filling
- 24 ounces (680 g) cream cheese, softened
- 1 cup (200 g) granulated sugar
- 3 large eggs
- 1 cup (240 g) sour cream
- ½ cup (50 g) unsweetened cocoa powder
- 4 ounces (115 g) melted dark chocolate, cooled
- 2 teaspoons vanilla extract
- 1 tablespoon cornstarch
For the Cherry Topping
- 2 cups (300 g) pitted sweet cherries (fresh or frozen)
- ⅓ cup (65 g) granulated sugar
- 1 tablespoon lemon juice
- 2 teaspoons cornstarch
- 2 tablespoons water
For the Whipped Cream
- 1½ cups (360 ml) heavy whipping cream
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Garnish
- Chocolate curls or chocolate shavings
- Fresh cherries with stems
- Cocoa powder (optional)
Instructions
- Preheat the oven to 325°F (163°C). Grease a 9-inch (23 cm) springform pan.
- Combine the chocolate cookie crumbs, melted butter, and sugar. Press firmly into the bottom of the pan.
- Bake the crust for 10 minutes, then let it cool.
- Beat the cream cheese until smooth. Add the sugar and mix well.
- Beat in the eggs one at a time on low speed.
- Mix in the sour cream, cocoa powder, melted chocolate, vanilla extract, and cornstarch until smooth.
- Pour the filling over the cooled crust.
- Bake for 60–65 minutes, until the edges are set and the center still jiggles slightly.
- Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
- Refrigerate for at least 6 hours, preferably overnight.
- Meanwhile, prepare the cherry topping by combining the cherries, sugar, and lemon juice in a saucepan. Cook over medium heat for 5–7 minutes. Stir in the cornstarch mixed with water and cook until thickened. Cool completely.
- Beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Spoon the cooled cherry topping over the cheesecake.
- Pipe or spread the whipped cream around the edges.
- Garnish with chocolate curls, fresh cherries, and a light dusting of cocoa powder before serving.
