Shrimp and Spinach Gratin is a creamy, cheesy baked dish that serves 4.
Ingredients
- 1 lb (450 g) large shrimp, peeled and deveined
- 2 tbsp butter
- 2 cloves garlic, minced
- 5 oz (140 g) fresh spinach
- 2 tbsp all-purpose flour
- 1 cup milk
- ½ cup heavy cream
- ½ cup grated Parmesan cheese
- 1 cup shredded mozzarella or Gruyère cheese
- Salt and black pepper, to taste
- ¼ tsp paprika (optional)
- ½ cup panko breadcrumbs
- 1 tbsp olive oil
- 1 tbsp chopped fresh parsley (for garnish)
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
- Melt the butter in a skillet over medium heat. Sauté the garlic for about 30 seconds.
- Add the spinach and cook until just wilted. Remove to a plate.
- In the same skillet, whisk the flour into the remaining butter. Cook for 1 minute.
- Gradually whisk in the milk and cream until smooth. Simmer until slightly thickened.
- Stir in the Parmesan and half of the mozzarella. Season with salt, pepper, and paprika.
- Fold in the spinach and shrimp, then transfer the mixture to the baking dish.
- Sprinkle the remaining mozzarella over the top.
- Mix the panko breadcrumbs with the olive oil and scatter evenly over the cheese.
- Bake for 20–25 minutes, or until the shrimp are cooked through and the topping is golden brown.
- Garnish with fresh parsley and serve hot.
