Ingredients
- 1 large head cauliflower, cut into bite-sized florets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat the oven to 425°F (220°C). Lightly grease a 9×13-inch baking dish or a large baking sheet.
- Season the cauliflower: In a large bowl, toss the cauliflower florets with the olive oil, garlic, Italian seasoning, paprika, garlic powder, onion powder, salt, and black pepper until evenly coated.
- Bake: Spread the cauliflower in a single layer on the prepared baking dish or baking sheet. Bake for 20–25 minutes, stirring halfway through, until the cauliflower is tender and lightly browned.
- Add the cheese: Sprinkle the cheddar, mozzarella, and Parmesan evenly over the cauliflower.
- Finish baking: Return to the oven for 5–10 minutes, or until the cheese is melted, bubbly, and lightly golden.
- Garnish: Sprinkle with fresh parsley before serving.
Tips
- Cut the florets into similar-sized pieces for even cooking.
- Don’t overcrowd the pan, or the cauliflower will steam instead of roast.
- For extra browning, broil for the last 1–2 minutes, watching carefully.
- Freshly grated cheese melts more smoothly than pre-shredded cheese.
Variations
- Spicy: Add ½ teaspoon crushed red pepper flakes or a pinch of cayenne.
- Bacon Cheddar: Top with cooked, crumbled bacon before serving.
- Mediterranean: Add crumbled feta cheese, olives, and fresh oregano instead of cheddar.
- Herb Parmesan: Increase the Parmesan and add fresh thyme and rosemary.
