Bacon and Tomato Sandwiches

Ingredients (Makes 4 Sandwiches)
- 8 slices bread (white, sourdough, whole wheat, or Texas toast)
- 12 slices bacon
- 2 large ripe tomatoes, sliced
- 4 lettuce leaves (optional)
- 4 tablespoons mayonnaise
- 2 tablespoons softened butter (optional, for toasting)
- Salt and freshly ground black pepper, to taste
Optional Add-Ins
- 4 slices cheddar, Swiss, or provolone cheese
- Thinly sliced red onion
- Avocado slices
- Dijon mustard
- Fresh basil leaves
Instructions
- Cook the bacon
- Fry the bacon in a skillet over medium heat for 8–10 minutes, turning occasionally, until crispy.
- Transfer to a paper towel-lined plate to drain.
- Toast the bread
- Lightly butter the bread if desired.
- Toast until golden brown.
- Assemble the sandwiches
- Spread mayonnaise on one side of each slice of toast.
- Add lettuce (if using).
- Layer the tomato slices and season lightly with salt and black pepper.
- Top with 3 slices of crispy bacon.
- Add cheese, onion, avocado, or basil if desired.
- Top with the remaining bread slices.
- Serve
- Cut each sandwich in half and serve immediately.
