Ingredients
For the Chicken
- 4 boneless, skinless chicken breasts
- 12 asparagus spears, trimmed
- 1 cup (115 g) shredded mozzarella cheese
- ¼ cup (25 g) grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
Optional Garlic Butter
- 2 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
Garnish
- Fresh parsley
- Lemon wedges
- Extra grated Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a baking dish or line a baking sheet with parchment paper.
- Using a sharp knife, carefully cut a pocket into the side of each chicken breast without cutting all the way through.
- Season the chicken inside and out with garlic powder, onion powder, Italian seasoning, smoked paprika, salt, and black pepper.
- Stuff each chicken breast with 3 asparagus spears, mozzarella cheese, and a sprinkle of Parmesan cheese.
- Secure the openings with toothpicks if needed.
- Brush the outside of the chicken with olive oil.
- Arrange the stuffed chicken in the prepared baking dish.
- Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- If using the garlic butter, combine the melted butter, minced garlic, and parsley, then brush over the chicken during the last 5 minutes of baking.
- Remove the toothpicks before serving.
- Garnish with fresh parsley, lemon wedges, and extra Parmesan cheese.
