Crispy Air Fryer Roasted Potatoes
These Air Fryer Roasted Potatoes are crispy and golden on the outside, fluffy on the inside, and seasoned with garlic, herbs, and a touch of paprika. They make the perfect side dish for breakfast, lunch, or dinner and are ready in under 30 minutes.
Ingredients
- 2 lbs (900 g) baby potatoes or Yukon Gold potatoes, halved or cut into 1-inch pieces
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp Italian seasoning
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp grated Parmesan cheese (optional)
- 2 tbsp chopped fresh parsley
Optional Garnishes
- Fresh rosemary or thyme
- Lemon wedges
- Red pepper flakes
Instructions
- Wash and dry the potatoes thoroughly. Cut larger potatoes into evenly sized pieces.
- If desired, soak the potatoes in cold water for 20–30 minutes for extra crispiness. Drain and pat completely dry.
- Preheat the air fryer to 400°F (200°C) for 3–5 minutes.
- In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and black pepper until evenly coated.
- Arrange the potatoes in a single layer in the air fryer basket. Cook in batches if necessary.
- Air fry at 400°F (200°C) for 18–22 minutes, shaking the basket every 6–8 minutes for even browning.
- During the last 2 minutes, sprinkle with Parmesan cheese if using.
- Remove the potatoes from the air fryer and garnish with fresh parsley and herbs before serving.
Tips
- Dry the potatoes well after washing or soaking to achieve the crispiest texture.
- Don’t overcrowd the basket—air circulation is key to even roasting.
- For extra-crispy potatoes, lightly spray them with oil halfway through cooking.
- Add fresh minced garlic only during the last few minutes of cooking to prevent burning.
