Ingredients
- 6 large eggs
- ¼ cup (60 ml) milk
- ½ cup (50 g) shredded cheddar cheese
- ¼ cup (25 g) grated Parmesan cheese
- ½ cup diced bell peppers (mixed colors)
- ¼ cup finely chopped onion
- ½ cup chopped fresh spinach
- ¼ cup diced mushrooms
- 1 teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Cooking spray or oil for greasing the molds
Instructions
- Preheat the air fryer to 320°F (160°C) for 3 minutes.
- Lightly grease a silicone muffin mold or air fryer-safe muffin cups.
- In a large bowl, whisk together the eggs and milk until smooth.
- Stir in the cheddar cheese, Parmesan cheese, bell peppers, onion, spinach, mushrooms, garlic powder, oregano, salt, and black pepper.
- Pour the mixture evenly into the prepared muffin cups, filling each about ¾ full.
- Carefully place the mold into the air fryer basket.
- Air fry for 10–12 minutes, or until the centers are set and the tops are lightly golden.
- Let the quiches cool for 2–3 minutes before removing them from the mold.
- Serve warm or allow to cool completely for meal prep.
