Ingredients
For the Zucchini Boats
- 2 medium zucchini, halved lengthwise

- ½ teaspoon onion powder

For the Buffalo Chicken Filling
- 2 cups (280 g) cooked shredded chicken
- 4 ounces (115 g) cream cheese, softened
- ⅓ cup (80 ml) Buffalo wing sauce
- ½ cup (50 g) shredded Cheddar cheese
- ¼ cup (25 g) crumbled blue cheese (optional)
- 1 teaspoon ranch seasoning
- 2 green onions, thinly sliced
Topping
- ½ cup (50 g) shredded mozzarella cheese
- 2 tablespoons shredded Cheddar cheese
- Chopped fresh parsley or green onions

Instructions
- Preheat the air fryer to 375°F (190°C) for 3 minutes.
- Slice the zucchini in half lengthwise and scoop out the center with a spoon, leaving about ¼ inch (6 mm) of flesh to create sturdy boats.
- Brush the zucchini with olive oil and season with garlic powder, onion powder, salt, and black pepper.
- In a large bowl, combine the shredded chicken, cream cheese, Buffalo sauce, Cheddar cheese, blue cheese (if using), ranch seasoning, and green onions. Mix until well combined.
- Spoon the Buffalo chicken mixture evenly into each zucchini boat.
- Sprinkle the tops with mozzarella and the remaining Cheddar cheese.
- Arrange the zucchini boats in a single layer in the air fryer basket. Cook in batches if needed.
- Air fry for 12–15 minutes, or until the zucchini is tender and the cheese is melted and lightly golden.
