Ingredients
For the Loaf
- 1½ cups (190 g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup (115 g) unsalted butter, softened
- ¾ cup (150 g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (120 ml) sour cream
- 1 cup (150 g) fresh or frozen blueberries
- 1 tbsp all-purpose flour (for coating the blueberries)
For the Cream Cheese Filling
- 4 oz (115 g) cream cheese, softened
- 2 tbsp granulated sugar
- 1 egg yolk
- ½ tsp vanilla extract
Optional Glaze
- ½ cup (60 g) powdered sugar
- 1–2 tbsp milk
- ½ tsp vanilla extract
Instructions
- Preheat the air fryer to 320°F (160°C) for 3–5 minutes.
- Grease and line a small loaf pan (about 6 x 3 inches) that fits inside your air fryer basket.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, then add the vanilla and sour cream.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Toss the blueberries with 1 tablespoon flour and gently fold them into the batter.
- In another bowl, mix the cream cheese, sugar, egg yolk, and vanilla until smooth.
- Spread half of the batter into the prepared loaf pan. Spoon the cream cheese mixture evenly over the batter, then cover with the remaining batter.
- Air fry at 320°F (160°C) for 35–45 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, loosely cover it with foil during the last 10–15 minutes.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- If using the glaze, whisk together the powdered sugar, milk, and vanilla and drizzle over the cooled loaf.
Tips
- Coat the blueberries in flour to help keep them from sinking.
- Avoid overmixing the batter to keep the loaf tender.
- Check for doneness a few minutes early, as air fryer models can vary.
- Let the loaf cool completely before slicing for neat slices.
