Air Fryer Mini Pineapple Upside-Down Cakes
These individual pineapple upside-down cakes are moist, buttery, and topped with sweet caramelized pineapple and cherries. They’re easy to make in the air fryer and perfect for individual servings.

Ingredients
Topping
- 2 tablespoons unsalted butter, melted
- ¼ cup (50 g) brown sugar
- 4 pineapple rings, cut to fit ramekins
- 4 maraschino cherries
Cake Batter
- ½ cup (65 g) all-purpose flour
- ½ teaspoon baking powder
- Pinch of salt
- ¼ cup (50 g) granulated sugar
- 1 large egg
- ¼ cup (60 ml) milk
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions
- Prepare the ramekins: Lightly grease four 6-ounce (180 ml) oven-safe ramekins.
- Divide the melted butter among the ramekins, then sprinkle the brown sugar evenly over the butter.
- Place a pineapple ring in each ramekin and add a cherry in the center.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, whisk the sugar, egg, milk, melted butter, and vanilla until smooth.
- Stir the dry ingredients into the wet ingredients until just combined.
- Spoon the batter evenly over the pineapple slices, filling each ramekin about ⅔ full.
- Preheat the air fryer to 320°F (160°C) for 3 minutes.
- Place the ramekins in the air fryer basket and cook for 12–15 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool for 5 minutes, then carefully run a knife around the edges and invert each ramekin onto a serving plate.
