Ingredients
- 1 cup (90 g) rolled oats
- 1 cup (125 g) all-purpose flour (or white whole wheat flour)
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 tablespoons honey or maple syrup
- 2 large eggs
- 1 cup (240 ml) milk (dairy or unsweetened almond milk)
- 2 tablespoons plain Greek yogurt
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter or light olive oil
Instructions
- Add the oats to a blender and blend into a fine flour.
- Add the flour, baking powder, baking soda, salt, honey, eggs, milk, Greek yogurt, vanilla, and melted butter.
- Blend for 30–45 seconds, until the batter is smooth.
- Let the batter rest for 5 minutes to thicken.
- Heat a lightly greased non-stick skillet or griddle over medium heat.
- Pour about ¼ cup of batter for each pancake.
- Cook for 2–3 minutes, until bubbles form on the surface and the edges look set.
- Flip and cook for another 1–2 minutes, until golden brown.
- Serve warm with your favorite toppings.
