Ingredients
- 1 cup (240 ml) heavy whipping cream, cold
- 225 g (8 oz) cream cheese, softened
- ΒΌ cup powdered erythritol or your preferred sugar-free sweetener
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a large bowl, beat the cream cheese until smooth.
- Add the powdered sweetener, lemon juice, lemon zest, vanilla extract, and salt. Beat until well combined.
- In a separate bowl, whip the cold heavy cream until stiff peaks form.
- Gently fold the whipped cream into the lemon mixture until light and fluffy.
- Spoon or pipe the mousse into serving glasses or bowls.
- Refrigerate for at least 2 hours before serving.

- Extra lemon zest
- A dollop of sugar-free whipped cream
