Here’s a simple and healthy way to make Baked Salmon in Foil with Asparagus—tender, flavorful, and super easy
Ingredients (Serves 2)
- 2 salmon fillets (about 150–200g each)
- 1 bunch asparagus, trimmed
- 2 tbsp olive oil or melted butter
- 2 cloves garlic, minced
- Juice of ½ lemon
- Salt & pepper to taste
- Optional: lemon slices, fresh dill or parsley, paprika
Instructions
1. Preheat Oven
- Preheat oven to 200°C (400°F)
2. Prepare Foil Packets
- Tear 2 large sheets of foil, enough to fold over salmon and asparagus
- Place salmon in the center of each sheet
- Arrange asparagus next to or partially under salmon
3. Season
- Drizzle olive oil or butter over salmon and asparagus
- Sprinkle garlic, lemon juice, salt, and pepper
- Optional: place a lemon slice on top of each salmon fillet
- Fold foil tightly to seal, creating a packet
4. Bake
- Place packets on a baking sheet
- Bake 12–18 minutes depending on salmon thickness
- Salmon should flake easily with a fork; asparagus should be tender-crisp
5. Serve
- Carefully open foil packets (steam will escape)
- Garnish with fresh dill or parsley if desired
- Serve immediately
Pro Tips
- Use even-sized salmon fillets for consistent cooking
- Don’t overcook salmon—it should remain moist
- Foil packets trap steam, keeping asparagus tender and salmon juicy
- Add cherry tomatoes, bell peppers, or zucchini for extra veggies
Variations
- Honey Garlic: Drizzle with honey + garlic before baking
- Mediterranean: Add olives, cherry tomatoes, and oregano
- Spicy: Sprinkle paprika or chili flakes over salmon
- Lemon Herb Butter: Mix butter with lemon zest and herbs, place on salmon before sealing
